Position Overview
We are looking for a skilled and motivated Sous Chef Saucier to join our high-performing culinary team. This is a hands-on leadership role in the Main Galley, overseeing the preparation of sauces and accompaniments for all onboard dining outlets.
Knowledge of French cuisine is a must—you will be expected to apply classical techniques and maintain consistent quality at a high volume.
This position reports to the Senior Sous Chef and supervises a Chef de Partie or Commis Chef.
⚠️ Important: Life onboard differs greatly from land-based operations. The average working schedule is approximately 10 hours per day, 7 days a week. Previous luxury cruise ship experience is a major plus, as it will ease the transition into the unique cruise dynamic.
Key Responsibilities
* Lead the daily operations of the saucier station
* Ensure consistency, quality, and proper mise-en-place across all sauces and accompaniments
* Supervise and coach junior team members
* Collaborate with other galley sections for efficient food service
* Maintain strict compliance with food hygiene, sanitation, and public health standards
* Follow the company’s SMS, STCW, MLC, USPHS, and environmental protocols
Requirements
* Available to join as soon as possible
* Valid STCW certificates, C1/D visa, Seaman’s Book, and Medical Exam
* Certified Culinary Diploma or equivalent professional training
* Minimum 3 years' experience as Sous Chef in a luxury cruise line or 5-star hotel or fine-dining restaurant
* Proven knowledge of French cuisine is essential
* Cruise ship experience strongly preferred due to operational differences
* Very good spoken English (minimum 70% score in onboard language test)
* Excellent organizational, leadership, and team communication skills
* High levels of stamina, flexibility, and professionalism
